Disconnected battery and installed a new coolant temperature sensor. Started Jeep up and check engine light was off. After 30 minutes the check engine light was back on and temp was still low.

My bet is your thermostat is sticking shut or there's air trapped in the cooling system. I am pretty sure that I soldered the correct wires to the correct wires, not sure if that matters.
